Dutch Smoked Beef, Heirloom Tomato & Parmesan Salad
Ingredients
200gm Dutch Smoked Beef, thinly sliced
3-4 Ripe Heirloom Tomatoes (We’ve used Beefsteak Tomatoes)
1 Punnet Strawberry Tomatoes
100gm Parmesan
Basil Leaves
Parsley Fronds
Olive Oil
Balsamic Glaze
Cracked Black Pepper
Cooking Method
Wash the tomatoes, slice and arrange a serving platter. Gently fold the Dutch smoked beef into rosettes and place on the tomatoes, shave the parmesan over the salad, sprinkle over the parsley fronds & basil leaves. Drizzle with olive oil and balsamic glaze and finish with some cracked black pepper.
Cook’s Tip
If beefsteak tomatoes are not available, try substituting with vine ripened or Roma tomatoes
For a decedent twist on this salad you could use truffle infused oil & shaved truffle parmesan
